BBD #26 Baking Bread for a Birthday Party – Marzipan-Rosenkuchen with Amaretto

Jamie from Life is a feast invited us for BBD #26 hosted by our wonderful Zorra to bake for a birthday party, especially for her own – unfortunately only – virtual birthday party. I don’t want to bake just a normal bread for her birthday party, so I choose a reciepe for something between cake and bread.
My contribution is a ‘Marzipan-Rosenkuchen’ with Amaretto. I couldn’t find out what’s the name in english. This is one of my favorit cakes and now I hope Jamie likes marzipan so that she will be happy with her birthday ‘bread’. |
I live in germany’s marzipan capital Lübeck and so marzipan is a must for a birthday cake.

The dough is a yeast dough enriched with butter and eggs and filled with marzipan, almond flakes and amaretto.

We enjoyed the cake very much with our afternoon coffee on sunday afternoon. It was so fluffy and sweet just a indulgence for marzipan maniacs like Mr. C. and me.

| 60 | gram | Butter, softened | |

| 60 | gram | Sugar | |
| 10 | gram | Salt | |
| Flour for rolling | |||

| 1 | Marzipan cover or 300 gram Marzipan minced | ||
| 200 | gram | Flaked almonds | |
| 100 | ml | Amaretto | |
| H | FROSTING | ||
| 5 | tbsp | Powdered sugar | |
| 2-3 | tbsp | Amaretto | |

Directions
Dough and Filling
Grease a round baking pan with 26-28 cm.
Disolve the yeast in the lukewam milk, and mix with the other ingredients and knead until the dough is smooth and shiny but quite sticky.
Put the dough into a lightly greased bowl, cover and let it rest for about 45 minutes.
Put the dough on a medium floured workplate, give a little flour on the top of the dough and roll careful to a rectangle about 40 x 50 cm.
Roll up marzipan cover an place it on the dough or spread the minced marzipan over the dough. Spread the flaked almonds exept for 3 tbsp over the dough, sprinkle over half the amaretto.
Roll up the dough from the small end, cut 2,5 cm pieces and place them with the surface on top in the pan.
Spread the remaining almond flakes and sprinkle the remaining over the cake and let it rest covered for about 60 minutes until doubled in size.
Preheat the oven to 180°C and bake for 30-35 minutes.
After cooling 10 minutes place the cake on a plate.
Frosting
Mix the powdered sugar with the amaretto, fill the mixture in an icing bag an sprinkle it over the cake.

Wow this is extraordinary and yes!!! I love it! This would so make all of us here happy. The texture is perfect and I do love the flavors. This is so perfect for a birthday party. No I’m sad that this party is only virtual too, I’d love a slice of this!

Der Kuchen sieht zum Reinbeissen aus! Ich habe zwar gerade vorhin ein Stück Kuchen gegessen, aber zu einem Stück von deinem würde ich jetzt nicht nein sagen!
